PORTLAND FERMENTATION FESTIVAL

The Portland Fermentation Festival was a huge success!
Thank you so much for coming to the event and our booth.
This year, we sampled:
1. Mild Miso Soup with Potato, Onion and White Miso
2. Robust Miso Soup (a.k.a. TONJIRU) with Pork, Root Veggies, Red Miso and Dark Red Miso
3. Chickpea Miso Dip and Fresh Cucumber (from our garden)
4. Newest flavored Amazake — Ginger & Spice
They were all smashing hits!
Regarding the two different types of miso soup, here is their background..
Our miso sales are very inconsistent. It goes faster in winter than summer. Does it mean Portland people really like miso soup? We guessed so and planned that our samples will hint the guests to enjoy various types of miso soup through this winter season.
We handed out small portions (but enough to make miso soup) of our 5 years aged Dark Red Miso to about 100 of the guests. Hope they make Tonjiru with the miso and enjoy!
We also sampled our 7 varieties of Miso, koji and koji seasonings like Shio-koji. Even though miso is salty, they tasted the samples one by one, carefully and with fascination. They looked very busy with so many samples available.
We had an amazing crew of 6 people @naomi_sango , @0okuyuko0 , @hakkolifepdx , @asanoyapdx , @taekuro1 and @chiharuotaka this year, and they worked tirelessly with us, and also enjoyed showcasing our products to the guests. We’re very lucky to have such an excellent and knowledgeable team to help us each time.
We also want to thank you, our stinky queens, @lizcrainpdx , @wanpakunatto and @urbancheesecraft for continuing such a wonderful event. It really helps Portland’s fermentation community be mutual and strong!🖖
